Ditto the cap, any closed cooling system will do this if the pressure is allowed
to drop by even a small leak to atmosphere-boiling point rises with pressure, if
you don't have a good seal, it boils at temps that might not open the
thermostat. Simple easy cheap first thing to change, THEN move on to other
theories if this does not resolve it...
